Almond Poppy Seed Bread

It's a Friday morning, I am thinking about what the day and weekend will look like but decided to put that off and make some Almond Poppy Seed Bread.

The ingredients are pretty simple; flour, sugar, baking powder, salt, vanilla, almond extract, milk, oil, eggs and of course poppy seeds. You have the option of putting a glaze on the bread which really does take it to the next level. I will post that recipe at the end of this recipe.

Start by dumping all the dry ingredients (sugar, flour, salt and baking powder) into your mixing bowl. Turn the mixer on for 5 seconds just to mix the ingredients together evenly.

Eggs and oil are the first ingredients you add to your dry ingredients. Turn your mixer on slow and low otherwise you will have a blizzard of flour. Mix until everything is combined nicely which is about 30 seconds.

Measure out the vanilla and combine. This is how your mixture should look. Kind of interesting...

Okay, here we go! Add in the milk and turn the mixer on slow and low again. The mixture is not suppose to be thick.

Finally add in your almond extract and poppy seeds. I like this picture. Mix to combine for just a few seconds.

I like to use small loaf pans. I find that it bakes quickly and it always gets done in the middle. But you could use 2 large loaf pans or 6 small ones or even use muffin tins. What pan size doesn't change that you need to use non stick cooking spray abundantly in the loaf pans. Add the mixture until the pan is about just over half full.

Bake at 350° for 35 minutes if using small loaf pans.

Bake at 350° for 55 minutes if using large loaf pans.

Insert a knife in the middle of the loaf and if it comes out clear your almond poppy seed bread is done. Transfer to a cooling rack for 10 minutes. Using a fork poke holes in the top of the bread. Apply the glaze to the loaf while still warm.


Almond Poppy Seed Bread

Prep time: 10 minutes

Oven Temp: 350°

Bake time: Small loaf pan-35 minutes

Large Loaf Pan- 55 minutes

Ingredients

  • 2¼ cups sugar

  • 3 cups flour

  • 1½ teaspoons baking powder

  • ¾ teaspoon salt

  • 1 cup plus 2 tablespoons vegetable oil

  • 3 eggs

  • 2 teaspoons vanilla

  • 1½ cups milk

  • 2 teaspoons almond extract

  • 2 tablespoons poppy seeds

Directions

  1. Add all dry ingredients (sugar, flour, salt and baking powder) to your mixing bowl. Turn the mixer on slowly for about 5 seconds to combine.

  2. Next add the eggs and oil. Mix until just combined.

  3. Add in the vanilla and mix.

  4. You can add the milk to your mixture. Very slowly turn the mixer on and mix until all ingredients are combined. Using a spatula to scrap the sides and the bottom of your mixing bowl.

  5. Finally add the almond extract and the poppy seeds. Mix to combine.

  6. Bake at 350° for 35 minutes for small loaf pans and 50 minutes for a large loaf pan. Using knife insert in the middle of the loaf. If it comes out clean the bread is done. Transfer to a cooling rack.

  7. After 10 minutes use a fork to poke holes on the top of your break. Frost with the glaze.

  8. Enjoy!

Glaze


Ingredients

  • ⅓ heavy cream or half and half cream

  • ½ cup melted butter

  • 2 cups powder sugar

Directions

  1. Combine the butter and cream together.

  2. Add the powder sugar to the mixture.

  3. Stir to combine.

  4. Using a fork make holes on the top of each loaf of bread. Put a layer of frosting on the top of each loaf.
