Need an easy yet tasteful recipe to spice up your winter spirits? Bingo. This recipe is so simple to make and can feed the entire family for an extended period of time. I just got a new slow cooker so I am trying out some recipes for BBQ Chicken. This one certainly makes the list of keepers. It is also gluten free which is always good. This way our 24 year old son can eat this chicken and maybe even make it at his place.
BBQ Chicken doesn't take many ingredients at all. Plus it is super easy.
To start, simply sprinkle the chicken on both sides with Taco Seasoning by Missy. If you don't have any available then just use salt and pepper.
Add 2 tablespoons of olive oil to a large pan on the stovetop. Turn the stove top on to medium heat. Brown the chicken on both sides.
In the meantime, while the chicken is browning mix
the BBQ sauce, honey and 1 tablespoon water together in a small bowl. For this recipe to be gluten free you must use Sweet Baby Ray's BBQ Sauce. Most other BBQ sauces contain gluten. Pour the mixture into your slow cooker.
Transfer the browned chicken to the slow cooker. Cook on low for 4 hours.
Chicken temperature should be at 165° internally.
I use my wonderful Pampered Chef Thermometer to check the internal temperature of the chicken. No, I don't sell Pampered Chef but I do love what they sell.
Serve with rice or potatoes or whatever floats your boat.

BBQ Chicken in the Slow Cooker (Crockpot)
Prep time: 20 minutes
Cook time: 4 hours on low
Serves: 4-5
Ingredients
9-10 Chicken Thighs (Bone in and Skin on)
Missy's Taco Seasoning (see recipe in previous post) or Salt and Pepper
1½ cups of Sweet Baby Rays BBQ Sauce
½ cup honey
1 Tablespoon water
Directions
After removing the chicken thighs from the package; season on both sides using Missy's Taco Seasoning or you can use salt and pepper to season the chicken.
Using a large pan with 2 tablespoons of olive oil brown/sear the chicken until brown on both sides. This should take about 4 minutes per side.
While the chicken is browning, mix together the BBQ sauce, honey and water. Transfer to your slow cooker.
Once the chicken has browned on each side you can add it to the slow cooker.
Cook on low for 4 hours.
