Oh my goodness! I'm probably biased, but these are the best biscuits I have ever made and they can be the best biscuits you make too. This method of making biscuits is very simple and less "messy" than the traditional method. But, they taste just as good and maybe even better!
If you don't have buttermilk, that's okay because you can just substitute milk with vinegar or lemon juice.
Here we go!
Ingredients:
Flour: I just use all purpose flour. You can make these gluten free by using gluten free flour. It works!
Butter: No need to freeze or chill the butter because you will be melting the butter.
Salt: No explanation needed
Baking Powder: No explanation needed just make sure not to use baking soda.
Sugar: Just plain granulated (white) sugar.
Buttermilk: I like to use buttermilk but when I am out of buttermilk I use 2 cups of milk with a 2 tablespoons of lemon juice. Let it sit for a few minutes. If you don't have lemon juice, use vinegar or cream of tartar with the milk.
We are ready to get this show started.
Mix together the flour, baking powder, salt and sugar in a bowl and whisk to combine.
Go ahead and add your 2 cups of buttermilk. Looks a bit messy but still very simple and easy for everyone to make.
Once you have added your buttermilk. Take a spoon or spatula and stir until the dry and wet are just combined together. Do not overmix. It's bit sticky but hey, you don't have to touch the biscuit dough for this recipe. Remember-simple, and not messy.
Go ahead and melt your butter in the microwave. It only takes about 30 seconds in my microwave.
No need to cool the butter. The next step is to pour it into the bottom of a 9 inch square pan that has not been greased.
Looking at this pan you can see the scratches as I have used this pan about 112 times. But you get the idea. Pour the melted butter in the bottom of the pan. Scoot the butter so you have a fairly even layer in the pan. The butter will still be hot or warm from the microwave.
Go ahead and dump (seriously) your dough mixture on top of the butter in the pan.
What a beautiful sight and your hands are still clean as can be. Next use a knife to score the biscuits. Three rows across and 3 rows down. Then pop the biscuits in the oven for 25 minutes.
Believe it or not this is the most difficult picture to take.
When the time is up go ahead and take the biscuits out of the oven. They will be sizzling around the edges. My goodness they smell so good.
I like to use my pastry brush and just brush a thin layer of butter over the top of the biscuits by Missy. Use a knife and cut where you scored the biscuits. Enjoy!
Biscuits by Missy
Makes 9 biscuits
Oven temp: 425°
Bake time: 25 minutes
Ingredients
2½ cups flour
4 teaspoons baking powder
1 tablespoon sugar
1 teaspoon salt
2 cups buttermilk
½ cup butter (1 stick)
Directions
Pre heat your oven to 425°
Mix the flour, baking powder, sugar and salt together in a medium sized bowl. (I use a whisk)
Add the buttermilk to the dry mixture. Stir together until just combined. Do not overmix.
Melt the butter in the microwave or on the stove top.
Pour the butter into a 9 X 9 inch pan. Spread evenly.
Dump the batter into the pan and spread evenly. Use a knife and score 3 rows across and 3 rows down for a total of 9 biscuits.
Bake at 425° for 25 minutes. Remove the pan from the oven to a cooling rack.
Using a pastry brush spread a think coating of butter over the biscuits. Serve and enjoy.
Missy's Tips
* I like to serve these warm but they keep very well for a few days when stored in a airtight bag or container.
* Cool before storing for future use.
*I have added cinnamon and raisins to my mixture in the past and frosted. So, so good!
*Let's talk about gluten free flour. My favorite brand to use is Gluten Free Jules. I have also used Mehl's Gluten Free Flour.
