Caramel Chex


By the time you read this post the Caramel Chex will be gone. You may know this recipe but if you don't it's time for you to get acquainted. Chocolate Chex coated with caramel, need I say more?

You don't need many ingredients for this recipe. I use Chocolate Chex but go to town and use any flavor Chex you want to use. That is baking soda in the little bowl. You don't need much but it is an important ingredient in this recipe.

To start measure 8 cups of cereal into a large bowl. But, make sure that your bowl will fit into your microwave.


In a smaller bowl (I use my Pampered Chef 4 cup measuring bowl) add the brown sugar, corn syrup and butter. Microwave on for 2 minutes or until it is melted together.

Once you have microwaved your butter, brown sugar and corn syrup it should look like this... time to add the baking soda and stir! The baking soda is going to increase the volume of your liquid so you want to make sure your bowl isn't to shallow or you will have a mess. A good tasting mess but...still a mess.

Pour the caramel mixture over the Chex and gently stir to combine until it looks like all the Chex has some caramel on it.

You are going to take the bowl of coated Chex and head to the microwave. In my case that is only about 6 steps. Microwave the mixture for 1 minute. Then take it out of the microwave and give it a stir.

Continue to microwave for another minute then stir and microwave for 1 more minute then stir. This is what it should look like after 3 minutes in the microwave.

Your last step is to dump it onto a baking sheet. No parchment and certainly no non stick spray allowed.

You will want to give it a few minutes to sit and then break apart the clumps. So, so good!


Caramel Chex Recipe


Prep time: 7 minutes

Microwave time: 3 minutes

Makes 8 cups


Ingredients

  • 8 cups Chocolate Chex

  • 1 cup brown sugar

  • ½ cup butter

  • ¼ cup light corn syrup

  • ¼ teaspoon baking soda

Directions

  1. In a large bowl that fits in your microwave measure 8 cups of Chocolate Chex Cereal.

  2. In another bowl add the brown sugar, butter and corn syrup. Microwave for 2 minutes or until all ingredients are melted together.

  3. Add the baking soda to the melted mixture. Stir to combine everything.

  4. Pour the caramel mixture over the top of the 8 cups of cereal. Mix together until combined.

  5. Microwave for 3 minutes. Taking out of the microwave after each minute to stir.

  6. Remove from the microwave and spread on a baking sheet.

  7. Let the Chex cool for a few minutes then break apart.
