Cheese Ball (1980)



That's right! The 1980's called and it wants its cheese ball back. I started making this cheese ball sometime in the 80's and like everything it has evolved into the recipe it is today. It takes about 10 minutes to make and is perfect for a school potluck or to munch on before your Thanksgiving meal. People love this cheese ball.

You may have to run to the grocery store to get the beef lunch meat, green onions and crackers of your choice but often people have the cream cheese in their refrigerator.



Make sure the cream cheese is soft. I always use Philadelphia Cream Cheese for this cheese ball but you can use the store brand. Take it out of the fridge approximately 10 minutes before you want to make the cheeseball. Next step, chop the onion into very fine pieces. You don't need much but as usual it is your decision if you want to add more or less green onion. People are kind of picky about their onions. Then open the beef and chop into small pieces. You can see the size I use for the cheese ball in the picture below.


Next add about 2/3 of your beef and your onions to the food processor. Add in your cream cheese and mix until combined. If you don't have a food processor you can do this in a bowl or mixer.

Once all the ingredients for the cheese ball are combined take it out of the processor and shape it into a bowl. To finish the cheese ball all you do is top it with the remaining beef. Yep, your hands will get a bit messy. But all good things in life are messy to start with...


Of course if you are not going to serve the cheese ball make sure to cover and refrigerate until you are ready to serve it. No need to put your crackers in the refrigerator.


Ingredients:

2 packages cream cheese (8 ounces packages)

2 packages Buddig Beef

1 tablespoon green onion

Crackers of your choice


Instructions:

  1. Take the cream cheese out of the refrigerator 10 minutes before you start the recipe.

  2. Chop the green onions finely and do the same with both packages of beef.

  3. Place the cream cheese, onions and 2/3 of the beef in a food processor and combine until all is mixed together.

  4. Carefully remove your mixture from the food processor and shape into a ball.

  5. Use the remaining beef to top the cheese ball.


Serve at a party, a potluck, before a meal or maybe the best way is a midnight snack.
