Chocolate Crinkles Cookies are full of chocolate and almost melt in your mouth. We make them at Christmas but really they could be made anytime of the year. They don't have green or red sprinkles and aren't in the shape of a tree. So you do you and make them whenever you want to make them!
There is nothing special about the ingredients in Chocolate Crinkles other than the cocoa powder. We keep it on hand throughout the year and you should do the same.
Flour, sugar, brown sugar, vanilla, cocoa powder, eggs baking powder and salt are the ingredients you use for this recipe. The powdered sugar you see in this picture is used to roll the dough in when they cookies are ready to bake. Let's get this party started! Oh my goodness, I forgot to picture the butter in our picture. You should NEVER forget the butter! Okay, here we go, combine the eggs, sugar, brown sugar and vanilla together in your stand mixer. Mix until combined but do not over mix.
Melt the butter in the microwave. We all know that adding hot butter to a mixture with eggs is not a good idea. In fact it's a terrible idea unless you want scrambled eggs. So let the butter cool!
While the butter is cooling down a bit add all the dry ingredients to another bowl. This would include the cocoa powder, flour, baking soda and salt. Set aside.
Remember the butter that you cooled? Add that to your sugar and egg mixture. Blend together for about 30 seconds. Next step, add in your mixture of dry ingredients.
Turn your mixer on and make sure it mixes the the ingredients and you don't see any flour. This takes about 1 minute. Voila! This is how your Chocolate Crinkles dough should look.
Now comes the most important part. Will you have any stir ins? Here some you could try; pecans, walnuts, almonds, chocolate chips, white chocolate chips, mint chips or you could even chop up a candy cane.
At this time if you choose a stir in, turn your mixer on low and add it in until combined. I added chocolate and white chocolate chips to my Chocolate Crinkles dough.
*I refrigerate the dough for 2 hours.
When you are ready to roll. No pun intended, make the dough into balls that are about 3/4 inch in size. Roll each ball into powdered sugar.
Please make sure to line your baking sheet with parchment paper. I can usually fit up to 15 Chocolate Crinkle Cookies on a baking sheet. Preheat your oven to 350°.
Bake for 11 minutes. Remove from the oven and let cool for 3 minutes then transfer to a cooling rack.
