Good Morning, I hope you are having a great start to the day. Our family is having egg bake for breakfast so we are starting the day the right way! The original recipe for this egg bake is from Taste of Home. This egg bake recipe has making an appearance at breakfast in our house for over 25 years. I guess that means it's a keeper. Many of the ingredients have been changed from the original recipe but that is okay!
Nothing fancy for the ingredients. I must share that when all the kids are home I either make this vegetarian and load it with all the vegetables we have in the fridge or make it with breakfast sausage.

To start this amazing egg bake, go ahead and make the bacon in the oven early in the day or the day before.
You want to chop up your onion and add it to a medium sized pan on the stove top. Sauté in a tablespoon of butter. Then add in your bacon that has already been cooked. Get everything combined in that medium sized pan and cook for about 5 minutes. This will add flavor to the mixture.
Take the bacon/onion mixture off the stove top and cool. In the meantime add the hash browns, gruyere cheese, swiss cheese, cheddar cheese and cottage cheese to a large bowl and mix together.

Okay, in a separate bowl, it doesn't have to be big, you should crack 7 eggs and give them a little whisk. Then add them to the big bowl and mix to combine everything.
Make sure to through in a pinch of salt and some pepper in for taste. By this time your bacon/onion mixture should be cooled. Let's add it to the egg mixture.
Mix to combine and then transfer to a 9 x 13 pan that you have sprayed with non stick cooking spray.
Put the egg bake in an oven that has been pre heated to 350°. Bake for 40 minutes or until a knife inserted in the middle of the egg bake comes out clear.

Bake Temp: 350°
Bake Time: 40 minutes
Ingredients:
½ cup chopped onion
2 cups of cooked bacon cut into small pieces
4½ cups thawed hash browns
1½ cups cottage cheese
2 cups cheddar cheese
½ cup gruyere cheese
1½ cups swiss cheese
Pinch of salt
½ teaspoon pepper
7 eggs
Directions:
Preheat the oven to 350°.
Add onion to a medium sized pan on the stove top. Sauté until soft.
Add cooked bacon to mixture and stir to combine. Continue to sauté for 5 minutes. Remove from heat to cool.
In a large bowl combine the hash browns, cheddar cheese, swiss cheese, gruyere cheese, cottage cheese, salt and pepper. Stirring together until all ingredients are mixed together.
Crack the 7 eggs into a small bowl and whisk together. Then add to the larger bowl with the hash brown mixture. Combine.
Add the cooled bacon/onion mixture to the large bowl with the egg mixture. Stir to combine.
Spray a 9 x 13 baking dish with non stick cooking spray to prevent the egg bake from sticking to the pan. Then transfer the egg mixture to the baking dish.
Bake at 350° for 40 minutes or until a knife inserted in the middle of the egg bake comes out clear.

Here are some suggestions for alternate ingredients you could use; mushrooms, sausage, green chilies, peppers, pepper jack cheese. Once you get used to making this egg bake the possibilities are endless.
Store any extra egg bake in the fridge in an airtight container up to 2 days.
