Fudge with Potato Chips combines two of my favorite foods. This idea came about because of my love for Carol Widman's Candy store who sells Chippers. Chocolate covered potato chips. Seriously!
This Fudge recipe is bursting with potato chips. Then add the amazing flavor of chocolate and you have a winner. Many of you know the fudge recipe. A throw back to the 1970's. The time when Shaun and David Cassidy were teen idols. When we had fun playing our 45's on the record player and life was full of simplicity.
I use mostly the recipe from Fantasy Fudge. (circa, 1970)
I add in a few more ingredients including these wavy potato chips. I highly recommend buying the thickest potato chips. Don't use Pringles or regular potato chips. I used these chips pictured below. Although, you can eat Pringles as you are making the fudge.
Start by adding the sugar, evaporated milk and butter to a large pot. It doesn't have to be a soup pot but close in size. Let it all melt together over medium heat.
Stir, stir, stir...until it starts boiling. Then stir some more, in fact for 4 minutes. If you stop stirring the world will not end but your fudge will scorch.
After it has boiled for 4 minutes you can remove the pot from the heat. Add in the chocolate chips, the marshmallow cream and the vanilla. Stir to combine everything in the pot!
Once you have finished stirring everything together it looks just like this!
It is time to add the potato chips. Make sure they are crushed lightly, you don't want to over crush the chips. The chips add flavor, texture and a salty taste to the fudge. Reserve 1/2 cup of the potato chips for the top of the fudge.
Combine with as little stirring as possible. We want to make sure the chips get immersed but not dissolved to nothing.
Butter a 9 x 13 pan. Of course I used my beautiful yellow pan but it really doesn't matter what color yours is, the fudge will turn out the same regardless of what color pan you use. Put the fudge in the buttered pan and spread evenly.
Lastly add the remaining chips to the top of the fudge.
Fudge with Potato Chips Recipe
Prep time: 12 Minutes
No Bake Time
Makes 24-30 pieces of fudge.
Ingredients
3 cups white sugar
1/2 cup butter
3/4 cup evaporated milk
1 package semi sweet chocolate chips (12 ounces)
1 teaspoon vanilla
1 jar marshmallow cream (7 ounces)
2 cups of crushed potato chips
Directions
Combine sugar, evaporated milk and butter in a good sized pot.
Over medium heat stir to combine this mixture.
Continue to stir until the mixture reaches a boil.
Continue to stir for 4 minutes as the mixture boils.
Remove from heat.
Stir in the chocolate chips, marshmallow cream and vanilla until everything is combined and you can no longer see the marshmallow cream.
Stir in 1½ cups of crushed potato chips.
Transfer mixture to a buttered 9 x 13 pan and smooth until even.
Top with the remaining potato chips.
Cut into equal pieces.
Missy's Tips
You could also add in walnuts or pecans in addition to the potato chips.
Only use semi sweet chips in this recipe. Milk chocolate will make it over the top sweet.
To freeze, transfer to an airtight container and place either wax paper or parchment paper between layers. Freeze for up to a month.
Since fudge is very sweet we often take a few pieces out of the freezer and then return the rest to the freezer.
