These are one of my favorite cookies. Those who know me well know that I love anything with lemon in it. My mom made them growing up and as an adult I make them to share with my dad. They require freezing time but that just allows you to make them in advance and take them out of the freezer and make when you are ready.
Like most cookies I make, I use butter when I bake. These take very little time to stir up. I use plastic wrap to form them into a roll for the freezer.
Cream the butter and sugar together.
After the butter and sugar are creamed together add in the eggs, lemon juice, and lemon zest.
Slowly add the dry ingredients to the wet mixture. You are now ready to add the chopped pecans to the cookie mixture. Then shape into rolls. You can see by my picture that my rolls look less than perfect but if you look at the finished cookies they are looking great!
Recipe
3/4 cup butter
1 cup sugar
1egg
1 tsp. grated lemon zest
1 tbsp. lemon juice
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 cup chopped pecans
Instructions:
⦁ Combine the sugar and butter together until thoroughly mixed.
⦁ Add in the lemon juice, lemon zest and egg and mix together.
⦁ Add the dry ingredients in until the dough is mixed well.
* Add in the chopped pecans.
* Freeze for 2 hours up to 2 days.
* Slice thinly and put on cookie sheets lined with parchment paper.
* Bake at 350° for 10 minutes. Let the cookies cool and then remove them from the cookie sheet to a wire rack.
* ENJOY!
Notes:
** If you don't have a lemon just increase the amount of lemon juice to 2 tablespoons.
**These are perfect with a glass of milk or a cup of coffee!
