So, I have posted the recipe for Monster Cookies and for Monster Cookie Dip. It only seems right that I post my recipe for Monster Cookie Bars. I actually make these more than the cookies because they are so much easier to make and serve.
You can see that many of the ingredients you will have in your pantry. I choose to add M & M candy, white chocolate chips, milk chocolate chips and caramel chips to our bars. I know someone who adds butterscotch chips to her bars. Let's get started!

Start by adding the butter, sugar and brown sugar the bowl. Once combined add in the eggs.
Add in the peanut butter, vanilla the baking soda then move on to the oats.
Now comes the fun part. I used the Valentine's Day
M & M's because...well you know it's Valentine's Day in a few short days. I always use the milk chocolate and white chocolate chips. I have also started using started using caramel chips. By this time your mixer is working hard and is starting to fill up. Add in your mix ins and turn the mixer on slowly.
We are almost finished here, put the mixture in a 9 x 13 pan that has sprayed with non stick cooking spray and bake for 27 minutes at 350°. Yep, it's kind of a messy endeavor patting the mixture into the pan but it has to be done! When they bars come out of the oven they are soft but will set together as they cool. I hope you enjoy this recipe as much as our family does. I love that they are gluten free so everyone in our family can enjoy the same treat!
Monster Cookie Bars
Prep time: 10 minutes
Bake temp: 350°
Bake time: 27 minutes
Ingredients:
1 cup sugar
1 cup brown sugar
½ cup butter
3 eggs
1½ cups peanut butter
3 teaspoons vanilla
2 teaspoons baking soda
½ teaspoon salt
3¾cup oatmeal
1 cup M and M
2½ cups of chocolate, white chips and caramel chips
Directions:
Preheat oven to 350°.
Combine butter and sugar in a mixing bowl. Mix until smooth.
Crack the eggs in a separate bowl and add to the butter/sugar mixture. Mix until combined.
Measure the peanut butter and add to the bowl. Mix until combined.
Add the vanilla and baking soda to the mixture. Mix.
Add the oatmeal to the mixture and combine.
Last of all measure out your mix ins. (candy and chips). Add to the bowl and turn the mixer on slowly and mix until just combined.
Bake at 350° for 27 minutes.
Remove to a cooling rack and serve when cool.

These are gluten free if you use gluten free oats. But not steel cut oats.
