Monster Cookies!


BOO! It's time to make Monster Cookies. If I am being honest I love the cookie dough almost as much as the cookies. I have been making Monster Cookies for years. I half the original recipe and they still make a very large batch. Packed with chocolate chips, M & M candy and peanut butter it would be hard not to like these cookies. Take a look at the ingredients.

I use oatmeal from Trader Joe's store. That makes these gluten free. Also, you can decide if you want to use the corn syrup or omit it entirely. I am not sure why it is an ingredient in this recipe. Someday, I will ask my mom. I also use creamy peanut butter because...of course you know it is the best. Let's get going on these babies!

Cream the butter and sugars together in a stand mixer. This makes such a huge batch that you don't want to destroy your hand mixer and I am not even sure if the hand mixer could do the trick with these Monster Cookies.

Once the butter and sugar is combined you can go ahead and add the eggs and vanilla to the mixture. I am sure you are just like me and make sure to crack the eggs into a bowl before adding them to the cookie mixture. Right?

That's a lot of eggs!

Add the soda to the wet mixture. Mix for just a few seconds until combined.

Here we go, my favorite, or maybe my least favorite ingredient to measure...peanut butter. It's a lot of peanut butter but I suppose we could consider these Monster Cookies a large source of protein? Either way, add your peanut butter to the mixture. Mix on low for about 30 seconds. By this time the mixing bowl is starting to fill up.

Next, add the oatmeal. Something I always do with my oatmeal is to put it in the food processor and give it a few pulses and then transfer it to my storage container. This way when you use it in your favorite recipes it is broken down a bit. Wait! Have I told you my Father in Law has an oat named after him? Seriously, that's what happens when you are a cereal chemist.

By this time your mixing bowl is full. I have a 6 quart mixing bowl and it can handle just about the size of this mixture. Remove the mixing bowl from the stand and use a large spoon to stir in your chips and candy.

Here is our masterpiece!

That was a bit of a workout stirring the morsels in to the mixture! Good job! So here I go again on my Pampered Chef soap box. I love my cookie scoop. I use the medium sized scoop with these cookies. Preheat the oven to 350° Lay your parchment paper on your baking sheet. Scoop the cookies onto the sheet.

Bake at 350° for 8 minutes. DO NOT OVERBAKE. I am really using a level 4 voice to share that information with you. The Monster Cookies will continue baking when you take them out of the oven. Let the Monster Cookies set for about 5 minutes on the pan. Remove to a cooling rack.

I am posting the half recipe for Monster Cookies. If you have a huge bowl and a huge stand mixer you could double the recipe.


Monster Cookie Recipe


Prep time: 15 minutes

Bake temp: 350°

Bake for 8 minutes


Ingredients

  • 1 cup softened butter

  • 2 cups brown sugar

  • 2 cups white sugar

  • 6 eggs

  • 4 teaspoons baking soda

  • 1 tablespoon corn syrup

  • 2 teaspoon vanilla

  • 3 cups peanut butter

  • 8½ cups old fashioned oatmeal

  • 1 cup M & M candy

  • 2 cups chocolate Chips

  • ¾ cup white chocolate chips

Directions:

  1. Preheat oven to 350°.

  2. Cream the butter and sugars together in your stand mixer until combined.

  3. Add the eggs and vanilla to this mixture. Mix on medium until combined.

  4. Measure the soda and add to the sugar and egg mixture. Mix just until combined, about 30 seconds.

  5. Add the peanut butter to the mixer. Mix on slow for about 30 seconds or until combined.

  6. You are ready to add your 8½ cups of oatmeal. Keep mixing until it is combined. At this time remove the bowl from the stand mixer.

  7. Add in your chocolate chips, M & M's and white chocolate chips. Stir by hand.

  8. Line a baking sheet with parchment paper.

  9. Using a medium scoop place the cookies on the baking sheet.

  10. Bake for 8 minutes.

  11. Remove from the oven and let cool for 5 minutes on the baking sheet.

  12. Transfer to a cooling rack.

  • Add any combination of chips. Just so it measures 3¾ cups total.

  • This recipe will make 7-8 dozen cookies.

  • To make this gluten free your oatmeal needs to be gluten free. Not Steel Cut oats.

  • Do not eat raw dough. Okay, don't eat to much raw cookie dough.
