Morning Glory Muffins

These Morning Glory Muffins are chock full of goodness. Carrots, pineapple, raisins, nuts and so much more! I might even say they are healthy for you. This recipe has been around for a long time but I wanted to share it with you because at our house we love these muffins. You use a number of ingredients but it's worth it. Many of these ingredients you might even have in your pantry!

Can you smell the tablespoon of cinnamon? You will certainly taste it in the muffins. So let's talk! If you don't like pineapple you could use applesauce. If you don't like coconut....don't use it. Same with the raisins and nuts. You see you can personalize this recipe to your liking! Let's get this party started!

Add together the oil, eggs and vanilla to a mixing bowl. Mix until combined. Using my beautiful yellow Kitchen Aid mixer it took about 20 seconds to blitz everything together. After this you add in the sugar and mix again.

So far pretty easy...right? Next add pretty much everything but the kitchen sink. The pineapple, raisins, apple, nuts, coconut and finally the carrots.

Even though we use a number of ingredients this is a pretty easy recipe to follow. My wonderful husband grated the carrots and the apple which saved me a good amount of time. I have also just chopped up the carrot in the food processor before to save time. Moving on we add the dry ingredients. First we start with the baking soda, salt and cinnamon. Mix a bit so they all get combined well. Next add in the flour.

And, turn on the blender very slowly, we all know what happens if we don't do that. Flour everywhere in your kitchen!

Once everything is combined you are ready to bake these muffins. Use either muffin liners or spray the pan liberally with cooking spray.

Since these are a heavier muffin I filled the cup about 3/4 full. However full you want to fill them just make sure they are all similar in filling so you get an even bake on the muffins.

Did I mention that you get 24 muffins out of this recipe? Seriously! Life is good!

Bake at 350° for 22 minutes. You will know they are finished when a toothpick or fork inserted in the middle comes out clean. Remove from the oven and set on a cooling rack.

Morning Glory Muffins


Level: Easy
Set Oven to 350°
Bake time-22 minutes
Makes 24 muffins

Ingredients

  • 1 cup vegetable oil

  • 3 eggs

  • 3 teaspoons vanilla

  • 1¼ cup sugar

  • 2 cups grated carrots

  • 1 apple shredded

  • 1 cup crushed pineapple drained

  • 1/2 cup coconut

  • 1 cup walnuts

  • 1/2 cup raisins

  • 2¼cup flour

  • 2 teaspoons baking soda

  • 1 tablespoon cinnamon

  • 1 teaspoon salt


Directions

  1. Pre-heat oven to 350°.

  2. Mix together oil, eggs and vanilla until combined.

  3. Add the sugar and mix until combined.

  4. Measure the pineapple, raisins, nuts, coconut, apple and carrots and add to the liquid mixture- mix until combined together.

  5. Add the baking soda, salt and cinnamon and mix together.

  6. Next add the flour to mix. Mix just until incorporated. Do not over mix.

  7. Line the muffins cups with paper liners or spray with cooking spray.

  8. Fill the muffins cups ¾ full with the batter.

  9. Bake at 350° for 22 minutes or until a toothpick or fork inserted into the muffin comes out clean.

  10. Remove the muffin pan to a cooling rack.

Missy Tips

  1. I love pineapple. I realize not everybody does. You can replace the pineapple with applesauce.

  2. If you don't like coconut, raisins or nuts. Just omit them from the recipe.

  3. You can not omit the carrots.

  4. You can make these gluten free by adding gluten free flour with the same measurements.
