Peanut Butter Blossoms

The picture says it all. Who doesn't love these wonderful Peanut Butter Blossom cookies. Full of peanut butter and then a wonderful chocolate star that melts in your mouth. I make these year round as they are also gluten free. That's right! Gluten Free cookies without any gluten free flour in the cookie. Not that we don't like gluten free flour it just has it's own taste.

Peanut Butter Blossoms are so easy to make with my recipe. Only 4 ingredients, well if you add the stars that's 5 ingredients. I found the chocolate stars easily but if you can't you can use Hershey's Kisses or you can even make these in a mini muffin tin and use mini Reese's Peanut Butter Cups. But that's another recipe for another day.

Let's get going on our Peanut Butter Blossoms.


That's all you need. You really don't even need the vanilla for the Peanut Butter Blossoms but I put vanilla in almost everything I bake. Start by adding 1 cup sugar to your mixing bowl or free standing bowl. Add the egg.


You are half way finished mixing up your cookies. Next add a teaspoon of vanilla and then add in the peanut butter and mix away.


I used to make a peanut butter cookie recipe that took up to 8 ingredients but after finding this recipe I have never gone back to the original recipe. The bonus is you don't even need to look your recipe up as you can remember the recipe for Peanut Butter Blossom Cookies. After mixing everything together this is what it looks like to the trained eye.


You are ready to roll! Roll in balls that are 3/4 inch in size. Next roll each Peanut Butter Blossom ball in sugar.


If you are like me and have a helper in the kitchen this is the perfect job for them. Once all the Peanut Butter Blossom balls are sugared put them on a pan and bake for 8-10 minutes in an oven that is set to 350° .


When your cookies are finished they will be slightly cracked on the top. Meaning it is time to remove them from the oven and put on the chocolate stars.


Simply put a chocolate star on top of each Peanut Butter Blossom cookie.


That's it! So easy to make and they taste delicious. The fact that they are gluten free also makes this a great cookie to share with friends and family as everyone can enjoy their taste.





Ingredients:


1 cup sugar

1 egg

1 cup peanut butter

1 teaspoon vanilla

Chocolate Stars or Hershey's Kisses



Directions:

  1. Measure the 1 cup of sugar and add to your mixing bowl.

  2. Crack the egg into a bowl and add to the sugar.

  3. Next add the vanilla and peanut butter.

  4. Mix together until all is combined. The dough is very sticky.

  5. Roll into 3/4 inch balls and toss in a bowl of sugar.

  6. Place the cookies on a baking sheet lined with parchment paper.

  7. Bake at 350° for 8-10 minutes. The tops of the cookies will start to crack.

  8. Place a chocolate star in the middle of each cookie.
