Peanut Butter Blossoms

Do these look familiar? They should! I posted this recipe for Peanut Butter Blossoms many moons ago on my blog. But, they should be part of every holiday as far as I am concerned. They have 4 ingredients, okay 5 ingredients if you count the stars. The most important part of these Peanut Butter Blossom cookies is that they are gluten free. That means you make one type of cookie that everyone can enjoy.


Ingredients:

*Creamy Peanut Butter

*Sugar

*Eggs

*Vanilla

*Chocolate Stars or Chocolate Kisses

I always buy my chocolate stars in early November as they become a hot item once December rolls around. I also like the stars since I don't have to unwrap them.

Let's get this party started!

Start your Peanut Butter Blossoms by adding 1 cup sugar to your mixing bowl or free standing bowl. Add the egg. I often double this recipe. So just add two times the amount of each ingredient to double the recipe.

You are half way finished mixing up your cookies. That's just how easy these are to make. Next add a teaspoon of vanilla and then add in the peanut butter and mix away. I use a mixer but you could easily mix these up by hand or use a hand mixer in a medium sized bowl.

I used to make a peanut butter blossom recipe that took up to 8 ingredients but after finding this recipe I have never gone back to the original recipe. Don't get me wrong-I think all Peanut Butter Blossom cookies are great.

The bonus is you don't even need to look your recipe up with so few ingredients you can remember the recipe for Peanut Butter Blossom Cookies. After mixing everything together this is what it looks like to the trained eye.

You are ready to roll! Roll in balls that are 3/4 inch in size. Roll each Peanut Butter Blossom ball in sugar. I just keep a bowl of sugar next to my cookie sheet and roll a few at a time.

Once all the Peanut Butter Blossom balls are sugared put them on a pan and bake for 8-10 minutes in an oven that is set to 350° .

When your cookies are finished they will be slightly cracked on the top. Meaning it is time to remove them from the oven and put on the chocolate stars or chocolate kisses.

That's it! So easy to make and they taste delicious. The fact that they are gluten free also makes this a great cookie to share with friends and family as everyone can enjoy their taste.

Peanut Butter Blossom Cookies-Gluten Free

Level: Easy

Time to mix: 5 minutes

Time to Bake: 8-10 minutes

Oven Temperature: 350°

Makes about 3 dozen


Ingredients

1 cup sugar

1 egg

1 cup peanut butter-creamy works best

1 teaspoon vanilla

Chocolate Stars or Hershey's Kisses


Directions:

  1. Measure 1 cup of sugar and add to your mixing bowl.

  2. Add the egg to the sugar and mix until combined.

  3. Next add the vanilla and peanut butter. continue mixing until combined.

  4. Roll into 3/4 inch balls and toss in a bowl of sugar.

  5. Place the cookies on a baking sheet lined with parchment paper.

  6. Bake at 350° for 8-10 minutes. The tops of the cookies will start to crack.

  7. Place a chocolate star in the middle of each cookie.

* If you can't find stars use hugs.

* Store in an airtight container in the freezer up to 2 months.
