Peanut Butter Rice Krispy Bars

**Gluten Free**

These are one of my favorite quick treats to make. To make them even better... they are gluten free which means our oldest son is able to have a sweet treat with the rest of the family. I use chocolate chips and mini M&M's on the top of the bars but you can use whatever you like or have at home in the pantry.














These bars are great to take to a potluck. I double the recipe which is what you will find below but if you are interested in making the bars in a 9x13 pan just half the recipe. Knowing how much people like these bars I often keep the ingredients at home in the pantry.














Let's get started!

Use a good sized cooking pot. (think; what would I use to make soup in...)

Combine the brown sugar and corn syrup together. Cook on medium heat until it comes to a light boil. TURN THE HEAT DOWN.























Add in the peanut butter. (I use creamy) Of course I also use butter. Who doesn't love the wonderful taste of butter?














Next add the cereal to the mixture you have created. I usually start with a smaller amount and work up to amount listed. Can you believe that you are almost finished making these amazing bars? That is just how easy they are to make!























Hang with me! We are almost finished with these luscious bars. Butter your 10 x 15 pan (or 9 x 13 pan) and add (dump) in your mixture from the stove top. Use a spatula or parchment paper to press down the bars so they are uniform. Add the candies and chocolate chips and press down again.

Recipe: 10 x 15 pan 9 x 13 pan

2 cups brown sugar 1 cup brown sugar

2 cups light corn syrup 1 cup light corn syrup

2 cups creamy peanut butter 1 cup creamy peanut butter

1/2 cup butter 1/4 cup butter

11-12 cups Rice Krispy Cereal 5-6 cups Rice Krispy Cereal

Chocolate Chips Chocolate Chips


Instructions:

  1. Mix together the brown sugar and corn syrup in a large pot on the stove top.

  2. Bring it to a light boil

  3. Turn the heat off

  4. Add in the peanut butter and the butter. Stir until melted and well combined.

  5. Add in the Rice Krispy Cereal until the mixture is at your desired "thickness".

  6. Prepare your pan by greasing it with butter.

  7. Transfer the mixture from the pot to the pan.

  8. Use a spatula or parchment paper to press the bars into the pan to they are flat.

  9. Cover with the candy and chocolate chips

Best to eat these within a few days to keep them tasting fresh. But that isn't usually a problem in our house and most likely won't be at your house either.
