Let's be honest. Who doesn't like potato chips and chocolate? Right? Well these cookies have both potato chips and chocolate as main ingredients. I actually started making these about a year ago when I wanted to make chocolate chip cookies but didn't have any nuts on hand so I just added some rippled potato chips. Soon after this these cookies became a fast favorite in our house.
Ingredients
Butter-make sure your butter is at room temperature. I bake often so I keep at least 4 sticks of butter out at a time. Otherwise I have to think ahead before baking. This has worked well for me.
Sugar- brown sugar and granulated sugar are used for this recipe.
Eggs-make sure your eggs are at room temp as well. Don't want to wait for them to warm from the fridge? Run the eggs under hot water for a minute.
Vanilla-I always, always use pure vanilla. One of my favorite ingredients to make everything better.
Baking Soda-no explanation needed, just don't use baking powder!
Flour-all purpose flour is used in this recipe. I have not made the cookies gluten free yet but if you decide to just substitute cup for cup. This means use the same measurement.
Chocolate Chips-I LOVE milk chocolate chips but these are your cookies so use whatever flavor makes your heart happy.
Potato Chips-this is a big deal, use only the ripple chips which means the thick potato chips.
Nuts-not necessary but always makes it better. I used walnuts but you can use whatever makes your heart happy. Just a reminder that pecans have a higher fat content and may change the make up of the cookie.
*That's it for the ingredients. Most of the ingredients you have at home in your pantry. Which makes this even easier to make.
Let's get these cookies started!
Start by creaming together your room temp butter and sugars. Next step add in your eggs.
So far pretty easy...this recipe is almost the same as chocolate chip cookies. Except-no salt, since the potato chips have salt we don't want to up the level of salt in the cookie. Then add the luscious vanilla.
Let's keep going...next add the baking soda and the flour.
Okie dokie, time for the fun stuff. First add in the nuts. Did you notice this beautiful bowl? I sure did! My daughter Julia made this bowl. Seriously how does she do it? I don't know, but I think she's the real deal when it comes to pottery and paint.
Okay, now that I have shared our amazing daughter's talent it is time to add in the chocolate chips and then then the potato chips. Which I have added extra of both in the past and the cookies turn out great.
And, voila! You are ready to put these gems in the oven.
I use my cookie scoop to put the cookies on a baking sheet covered in parchment paper. Which brings up another topic, I always use parchment paper. It makes a difference. So of course I ordered a big stack from Amazon.
I only put nine on this pan but you could surely fit 12. You can see the potato chips sticking out of the dough. So let's put these in the oven at 350° for 12 minutes. This is my oven and I am very aware that it cooks a bit on the hot side so you know your oven and adjust as necessary.
When the cookies are golden brown, they are done even if it is 11 minutes and 10 seconds. Let them sit on the pan for a few minutes. Then move them to a cooling rack.
And, just like that you have delicious potato chip cookies with chocolate chips and nuts. This recipe makes about 5 dozen cookies. But of course if you make the cookies smaller or bigger that number will change.
Potato Chip Cookies Recipe
Level: Easy
Oven Temp: 350°
Bake time: 12 minutes
Makes approximately 60 cookies
Ingredients
1 cup butter softened
1 cup brown sugar
1 cup granulated sugar (white sugar)
2 eggs at room temp
1/2 teaspoon baking soda
2 1/2 cups flour
1/2 cup chopped walnuts
2 cups chocolate chips
3 cups slightly crushed rippled potato chips.
Directions:
Combine butter and sugars and mix for 2 minutes until fluffy.
Add the eggs and mix until combined.
Pour the vanilla into the mixture and blend.
Add the soda and flour and mix until combined.
Dump the walnuts, chocolate chips and potato chips into the dough. Mix until combined.
Using a cookie scoop, spoon or your hand shape the dough to put on the cookie sheet lined with parchment paper.
Bake at 350° for 12 minutes.
Transfer to a cooling rack.

Missy's Tips
Use any type of chips you like including semi sweet, white chips, cinnamon chips, etc.
You can add the nuts or omit them. The cookies will turn out fine.
If you add pecans, they have a higher fat content so your cookies may look slightly different. But taste great!
