These Snickerdoodle Bars were part of a lazy day. I needed to make something "snickerdoodle" and was too lazy to make the cookies so I found these bars on another blog and changed the recipe to fit my needs. They are buttery and full of cinnamon! The Snickerdoodle Bar recipe also takes much less time to make than the actual cookie.
With Christmas around the corner I made mine with green sprinkles. I brought these to work today and was going to bring some home so my husband could enjoy a few but that isn't happening. They are all gone! Let's get started, I make the Snickerdoodle recipe using a baking sheet. You should get at least 48 bars out of this recipe. If you cut them smaller you will have even more. This is a great idea for a Christmas Potluck.
Let's get started with these homemade SnickerDoodle Bars
You will see that we don't use the white sugar and cinnamon until we get to the toping for Snickerdoodle Bars. No worries they are full of cinnamon flavor! Here we go! Cream the butter and brown sugar together.
You can't see it but I have 4 sticks of butter and lots of brown sugar in my mixing bowl. This recipe should be made in your stand mixer or a very large bowl. Cream together until smooth. Next add the eggs and vanilla to the butter/sugar mixture. Mix until combined.
It looks like a big mess but no worries, it's all just part of the process. Add in your baking powder, salt and flour slowly and mix until combined. The dough is pretty stiff. Use a scraper to make sure all the ingredients are mixed together from the side of the mixing bowl.
When everything is combined transfer the dough to your baking sheet that has been lined with parchment paper and sprayed with non stick cooking spray.
It's a sticky process but can be made easier if you use parchment paper to help smooth out the bumps as you press the dough into the pan. Just spray the parchment paper with the cooking spray.
This step is when the Snickerdoodle comes to life. Combine the granulated sugar with the cinnamon. Sprinkle over the top of the bars.
If you want to make the Snickerdoodle bars look like the holidays, add the green sugar to the bars. You could also add red sprinkles if that's your thing.
Time to bake! Bake at 350° for 25 minutes or until a toothpick inserted into the bars comes out clean.
You can see the golden goodness. Honestly I have made these bars many times and they don't look perfect... but once you cut them to serve they will disappear before you can say, Merry Christmas.
Snickerdoodle bars Recipe
Prep time: 10 minutes
Bake at 350° for 25 minutes
Makes 4 dozen bars.
Ingredients
2 cups butter
4 cups brown sugar
4 eggs
2 tablespoons of vanilla
4 teaspoon baking powder
½ teaspoon salt
5⅓ cups of flour
4 teaspoons cinnamon
¼ cup granulated sugar
Directions
Cream butter and brown sugar together until smooth.
Add in the eggs and vanilla, mix until combined.
Combine the baking powder, salt and flour in a separate bowl. Slowly add to the wet mixture and mix until all is combined.
I use a baking sheet that measures 13 x 18. Line with parchment paper and then spray with non stick cooking spray.
Spread your batter on the baking sheet and spread evenly. I use parchment paper sprayed with cooking spray to help smooth out the dough.
Combine the granulated sugar and cinnamon. Sprinkle over the bars.
Bake at 350° for 25 minutes.
Cool and cut into bars.

Use green or red sugar during the holidays. Simply sprinkle over the top.
These bars freeze very well. Cut evenly and store in an airtight container for up to 3 months.
You can half this recipe and put in a 9 x 13 pan.
