If I am being totally honest I love Spritz Cookies with a glass of milk, but, I don't love using the spritz contraption. Save that for my husband who every year helps with these cookies by pressing the cookies for me. But he did share his advice for making it much easier to use the spritz press. I will share that with you as we make these delectable Christmas cookies. Oh, you can make them anytime of year but in our house we make them only at Christmas.
You only need 6 ingredients for our recipe. Unless you count the sprinkles then that would make 7 ingredients for this recipe. The Spritz recipe came from my mom's cookbook Good Stuff. And yes, you are looking at 2 cups of butter for this recipe. Let's start by creaming the butter and sugar together. It is best to start with softened butter for this recipe.
Once the butter is creamed together you add in your 4 egg yolks. I save the whites to use with another recipe that I will be posting this week. (Coconut Butter Balls)
At this time you also add the vanilla and almond extract. I recommend using pure vanilla and pure almond extract for the Spritz recipe. Turn your mixer on and beat until the eggs and flavorings are combined with the butter/sugar mixture. This should take about 30 seconds. Next add in the flour, slowly, unless you want a cloud of flour rising above your mixer.
Your dough should look similar to mine.
You are ready... to either attempt to use the cookie press or ask your husband to help press the cookies. As I mentioned tradition in our house has my husband pressing the Spritz.
TIPS for USING THE COOKIE PRESS for Spritz Cookies
chill the dough for 10 minutes.
Use a cold cookie sheet.
DO not use parchment paper. There is so much butter in these cookies they could not possibly stick to the baking sheet.
Bake for 8-10 minutes at 400 degrees. Remove from pan to a cooling rack when the cookies have cooled. As you can see we used green sprinkles on our cookies. It gives a little pop to the cookies but it also makes them stick to the pan when cooled.

Prep Time: 10 minutes
Bake Time: 8-10 minutes
Preheat oven to 400 °
Ingredients:
2 cups softened butter
1⅓ Cups Sugar
4 eggs yolks
2 teaspoons Vanilla
4 cups flour
½ teaspoon almond extract
Directions:
Preheat oven to 400°
Cream together the butter and sugar until smooth.
Add in the egg, vanilla and almond extract. Beat for about 30 seconds until combined with the sugar mixture.
Slowly add in the flour.
Using a cookie press add the dough to the press.
Press onto a baking sheet that has been refrigerated.
Bake for 8-10 minutes. When the cookies are cooled remove to a cooling rack.
TIPS from Missy
Use softened butter.
When preparing to use the cookie press make sure the dough has been chilled for 10 minutes.
Use cookies sheets that are cold
Do not use parchment paper on the cookie sheet.
