Sugar Cookie Bars





Sugar Cookie Bars are one of my favorite bars to make for big gatherings. They are both delicious and easy to make. I have had this recipe requested over and over. Little do they know that I use a cookie mix to make the bars. Seriously!




Make sure to pick up Betty Crocker brand for this recipe. You will need 2 packages of cookie mix. I use real vanilla but if you are more into almond…then that is your flavoring… I always use butter! It’s the best!

Let’s get started!

Empty the mix into a medium size bowl. No need to use the stand mixer for these bars.




Next add in your melted butter. I just melt mine in the microwave, but you can use the stove top if you prefer. Make sure to let the butter cool down a bit first.




** This part is important. Do not add the eggs until the mixture with the butter is completely cooled. You will have bars with bits of scrambled eggs if you skip this step.

So far, so easy. This all takes about 5 minutes to complete as long as you melt the butter before you make the bars.

Mix in the eggs and the luscious vanilla.





Place the cookie dough in a greased sheet pan. I use the back of the spoon to press the bars down in the pan. They don’t look pretty but don’t worry, once they bake and you frost them, they will be a masterpiece! Bake at 350 for 20 minutes or until the bars are golden brown.




Sugar Cookie Bar Recipe:

Ingredients:

2 pouches of Betty Crocker Sugar Cookie Mix

2 Sticks Butter (1 cup)

2 Eggs

2 teaspoons Vanilla

Instructions:

1. Empty the cookie mixes into medium size bowl.

2. Melt the butter and cool. Add to the mixture.

3. Add the eggs and mix with a wood spoon.

4. Add the vanilla.

5. Press into a greased pan. Use the back of a spoon to press down in the pan.

6. Bake at 350° for 20 minutes until golden brown.

7. Cool before frosting.


Frosting:

Ingredients:

1 stick butter (1/2 cup) melted

¼ cup heavy cream

1 teaspoon lemon juice

4-5 cups powdered sugar.

Instructions:

Mix all ingredients together. Use to frost the cooled bars. Use sprinkles or your favorite decoration to top the bars with if you wish.
